The Founder

Chef Edouard Marchal

Edouard was nineteen when he first picked up a knife professionally — in the basement kitchen of a three-star Paris restaurant where the Chef spoke only in commands and the lessons were learned through repetition and burns.

Fifteen years and four continents later, he arrived in New York with a single ambition: to open a room where classical French discipline met the irreverence of a city that never stops questioning itself.

Aurum opened on a Tuesday in October 2009 with 28 covers, a borrowed sommelier, and a menu that changed every three days. It earned its first Michelin star within twelve months. The second came in 2014, and has remained every year since.

We source from within 150 miles wherever possible. Our farmers, fishermen, and foragers are named on our menus.

Milestones

A Decade and a Half

2009

Opening Night

Aurum opens with 28 covers on West 54th Street. A Tuesday in October. Every dish sells out. The first review appears in the Times three weeks later.

2011

First Michelin Star

Within eighteen months, Aurum receives its first Michelin star — the fastest first-star acquisition in New York that decade.

2014

Two Stars & a New Room

The second Michelin star arrives. The private dining room is unveiled — a 20-seat jewel box upstairs, available for exclusive events.

2019

The Decade Collection

A one-off 14-course retrospective menu — one course for each year — served for a single month. 400 covers. Fully booked in two hours.

2023

#7 in the World

Aurum enters the World's 50 Best Restaurants list at number seven — the highest new entry of the year.
